  2. Continuation for the Baked Rigatoni with Spinach and Cashew "Cheese" recipe: 3. Add tomato sauce, cans of diced tomatoes, diced tomato, coconut aminos, and red wine vinegar. Let the sauce simmer for 30 minutes. Afterwards, take the sauce off the heat and add in the spinach and basil, letting the residual heat wilt the leaves. 4. Preheat the oven to 400 degrees and heat a pot of water on the stove to cook the pasta. Cook according to package then drain and set aside. 5. Drain the cashews but keep the soaking water. In a food processor or blender, put in the cashews and then add in the soaking water until the cashews are barely covered. If you need less, do not add the rest of the soaking water. Blend until it is smooth. Season with salt, pepper, and nutritional yeast flakes. 6. Mix the cooked pasta with sauce and cashew cheese. Place the pasta mixture into a baking dish and cover with foil. Bake it for 30 minutes then let it cool for at least 10 minutes before serving.

This is one of the few vegan dishes I've made that fooled Mr. Sun who had no clue it was meatless: Baked Rigatoni with Spinach and Cashew "Cheese" Ingredients 1 lb pasta 2 cups raw cashews 1 onion, diced 4 cups mushrooms, sliced thinly 4 cloves garlic, minced 2 teaspoons oregano 1 Tablespoon coconut aminos 1 Tablespoon red wine vinegar Olive Oil 1 15 ounce can of tomato sauce 2 14.5 ounce cans of fire roasted diced tomatoes 1 tomato, diced salt and pepper 2 carrots, chopped 1 cup spinach, chopped 2 Tablespoons fresh basil, chopped water nutritional yeast flakes Method 1. Soak the cashews in water for 4 hours. 2. In a big pot, heat the oil with onion, garlic and carrots. When they are soft, add the sliced mushrooms in batches until they are all browned. Season with salt, pepper, and oregano. See post below for remaining directions.
  4. If you like chocolate and amaretto, I highly recommend this White-Chocolate Semifreddo! It's definitely decadent but worth it. Ingredients 3 large egg yolks 1/4 cup granulated sugar 1/4 cup amaretto 1/2 cup heavy cream 3 ounces white chocolate, melted 1/2 cup hazelnuts (2 ounces) Directions Fill a large bowl halfway with ice water. Combine egg yolks, sugar, and amaretto in a heatproof bowl set over a pan of simmering water. Whisk until mixture is pale and thickened, about 2 minutes. Strain through a fine sieve into a small bowl. Place bowl in ice water until mixture has cooled slightly. Press plastic wrap directly over the surface, and refrigerate for at least 30 minutes. Beat cream until stiff peaks form. Gently fold in the white chocolate, then the chilled yolk mixture. See link above for the rest of the recipe....
  5. I've tried lots of waffle recipes but our latest attempt resulted in crunchy waffles on the outside and airy, lightness on the inside. Give these waffles a try! Ingredients 3/4 cup all-purpose flour 1/4 cup cornstarch 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1 cup whole milk or buttermilk 1/3 cup vegetable oil 1 egg 1 1/2 teaspoons sugar 3/4 teaspoon vanilla extract Butter and syrup, for serving Directions In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes. Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.

  12. I recently tried out the Ginger Soy Glaze for baked chicken wings and it was delish! I highly recommend trying out this one if you are looking for chicken wings with a sweet note to it instead of the usual buffalo spicy flavor. (Of course, it also includes a buffalo sauce, too, in case you want both!) Ingredients GINGER-SOY GLAZE 1/4 cup honey 1/4 cup water 2 tablespoons soy sauce 3 large garlic cloves, crushed 1 2x1' piece of ginger, peeled, sliced WINGS 5 pounds chicken wings, tips removed, drumettes and flats separated 2 tablespoons vegetable oil 1 tablespoon kosher salt 1/2 teaspoon freshly ground black pepper For directions, go here.
